Much to your chagrin, I make hot breakfasts for my hubby and kid almost every day. They are sooo much better than boxed cereal, which on top of costing and arm and a leg, they also are usually crammed with sugar, or highly processed or both. So there you go.
But you should too! This is a new fave although it's a twist on an old fave, a McDonell family tradition, big pancake. I added some apples and sliced almonds. So good. So easy! And Harry is all about pressing buttons; electronic or otherwise. So it may as well be on the blender...
Big Pancake With Apples and Almonds4 eggs
1 1/4c milk (skim milk puffs up the best)
1 1/4c flour
3 apples, peeled and thinly sliced
handful of sliced almonds
First, turn on your oven to 425 and put your cast iron (it must be cast iron, non-stick with not stick obviously and the pancake won't rise) and a knob of butter into the oven. Then place the eggs, one at a time in the blender, whirring away in between. Then milk. Then flour. By now the oven should be close to temp and the butter will be melted. So take the pan out and add the apples and almonds. Then pour the egg mixture over the top. 25 minutes in the oven (go have a shower) and you have breakfast! Mmmmm. One of our faves...
