This is a variation of my Mom's Crispy Oatmeal Cookies. It's one of my two favorite chocolate chip-oatmeal cookie recipes....
Kitchen Sink Cookies
1/2c white sugar
1/2c brown sugar
1c butter
1 egg
1tsp vanilla
1tsp baking powder
1tsp baking soda
1/4tsp salt
1 1/2c flour
2 1/2c oatmeal
Up to this point, it's your basic cookie. Mix the sugars and butter until creamy. Mix in the dry ingredients. Then the egg and vanilla.
Now for the good stuff... Any and all work, use what you like/have/want.
3/4c coconut
1/2c chocolate chunks
1/2 cup nuts (these cookies had pecans)
1/2 cup dried fruit, softened in warm water (I used my dried cherries from last summer since I'm trying to finish last year's supply before the glut happens this year.)
Roll into balls and press down slightly. Bake at 350F for 12 to 15 minutes (depends on your chewy to crispy ratio for a good cookie).
Try and wait a bit before sinking your teeth into one, the chocolate is hot!
