I was perusing through the cookbook "Pacific Flavours" by Virginia Lee; a sumptuous guide to some of the finest restaurants and inns in BC. The photos are mouth-watering and the recipes do the same. Here's a choice example...
Chateau Whistler's Granola
4 cups oats
1 2/3 cups pecans
1 1/3cups wheat bran
1 1/2 cups slivered almonds
1 1/3 cups sunflower seeds
2/3 cups sesame seeds
1/3 cup oil
2 1/2 cups raisins
1 1/2 cups chopped dates
3/4 cups dried currants
1/3 cups liquid honey
In a large bowl combine the oats, nuts and oil and spread out on a baking sheet. Place in a 325F oven for 30 minutes (stirring every ten). Remove from heat, stir in honey then add the fruit.
Cool, then store for up to one month.
Of course I made some modifications! Since I dried some peaches, strawberries and raspberries this past summer, they had to join the party. And I omitted the raisins and dates as they are not loved at my house. But that's the beauty of granola, you can add what you want. And it tastes so much better than bought. What a great way to way up and greet the day.
