There is a bakery in Sisters, Oregon (called Sisters Bakery of all things) that makes the very best apple fritters. Dense, cake-like doughnut with chunks of apples and then dipped in a powdered sugar glaze. They're not too sweet and big enough for two or three people to share. I dream of these fritters.
Now Sisters is even farther away than it was when I lived in Portland, but one cannot control her cravings... So it's time to try and emulate these beasty beauties.
Colin even made the endeavour possible by buying a deep-fat fryer (don't let the man go to Costco alone; who knows what he'll come home with).
Here's the recipe, modified from "Pacific Northwest the Beautiful" Cookbook:
2 cups all-purpose flour
1 Tsp baking powder
1/2 tsp salt
2 Tsp sugar
1 Tsp ground cinnamon
1 1/3 cups milk
4 eggs, separated
1 Tsp lemon juice
1 Tsp vegetable oil
This is like a pancake batter; whip egg whites, blend other wet ingredients together, blend dry ingredients together. Then mix wet and dry together before folding in the egg whites. The recipe called for 2 cups of fruit to be added so I made a chunky cinnamon apple sauce and folded that in after all of the other ingredients were mixed.
The recommended temperature for the oil for deep-frying was 375F and time for each fritter was 3 to 5 minutes. I think it will take a bit of time to perfect the recipe and the timing (some were too gooey and doughy inside), but these were a great first try! When done right these fritters had a delicious crispy outside and soft apple centre. And I loved the chunks of apples!
